Why traditional roasting?

Dry-roasting each grain individually is the cornerstone of the देसी method. It naturally extends shelf life, unlocks deeper nutty flavour compounds, and eliminates the need for any synthetic preservative — zero chemicals, ever.

Step by Step

Measure & Fluff
Add flour to a wide bowl and fluff with fingers to aerate the grain before adding any water.

Lukewarm Water
Always use 35–40°C water to gently soften the roasted millet fibres without shocking the dough.

Pour Gradually
Make a well in the centre and add water in small increments — never all at once for full control.

The Initial Bind
Swirl inward until the flour forms a clean, cohesive mass with no dry pockets or wet patches.

The 5-Min Knead
Press with knuckles and palms to activate wheat’s natural elasticity.

Smooth Finish
Stop when it feels soft as an earlobe — completely non-sticky, uniform surface throughout.

Prevent Drying
Shape into a ball. Swipe a damp cloth or drop of oil over the surface to seal in moisture.

The most important step. Do not skip. Bran fibres fully absorb hydration for a dramatically softer roti.
